Lamb Chops With Sour Cream Olive Sauce Recipe

Ingredients

 
6 large loin or shoulder lamb chops, cut 1 inch thick
 
Salt and pepper
 
1/2 teaspoon crumbled dried tarragon
 
1 teaspoon dry mustard
 
2 tablespoons sherry
 
1/3 cup commercial sour cream
 
2 tablespoons sliced stuffed green olives

Directions

Place meat on a broiling rack and broil.
For well done chops, allow about 8 minutes broiling time for each side.
Sprinkle chops with salt and pepper to taste, then remove to a platter and keep hot.
Scrape pan drippings into a small saucepan and add the tarragon, mustard, and sherry; simmer for 1 minute.
Stir in sour cream and sliced olives.
Stirring, heat but do not boil.
Pour over chops and serve at once.
