Lamb Chops with Minted Fruit Sauce Recipe
Ingredients
| Sugar | 2 Teaspoon | |
| Cornstarch | 1 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| Orange juice | 1 Cup (16 tbs) | |
| 2 teaspoons snipped fresh mint or 1/2 teaspoon dried mint, crushed | ||
| 1/2 cup mixed dried fruit bits | ||
| 8 lamb loin chops, cut 1 inch thick (about 2 1/2 pounds) | ||
Directions
For sauce, in a small saucepan combine sugar, cornstarch, and salt.
Stir in orange juice.
Cook and stir over medium heat till thickened and bubbly.
Stir in mint.
Cook and stir for 2 minutes more.
Remove from heat.
Remove 1/4 cup sauce and set aside.
Stir fruit into remaining sauce; cover and keep warm.
Grill chops on an uncovered grill directly over medium coals for 12 to 15 minutes for medium-rare or till desired doneness, turning chops once and brushing with the 1/4 cup sauce.
Serve chops with the fruit sauce.
Garnish with fresh mint, if desired.
