Ingredients

 
1/2 lb flaky pastry
 
2 tbsp butter
 
3 shallots, minced
 
1/2 cup canned sliced mushrooms, drained
 
2 ham slices, cut into thin strips
 
1 tsp tomato paste
 
Salt and pepper
 
4 lamb chops, trimmed
 
1/2 oz cognac, heated
 
1 egg, beaten

Directions

Preheat oven to 400 °F (205 °C).
Roll out pastry dough.
Cut into 4 squares.
Set aside.
In a frying pan, melt half the butter.
Lightly cook shallots, mushrooms and ham.
Mix in tomato paste, salt and pepper.
Set aside.
In a skillet, melt remaining butter.
Sear lamb chops on both sides.
Sprinkle with cognac.
Flambe.
Place each lamb chop on a pastry square.
Top with ham stuffing.
Seal in pastry, leaving bone tips uncovered.
Brush with beaten egg.
Cook in oven 12 minutes or until dough turns golden brown.
