Lamb Chops In Cider Recipe
Ingredients
| Flour | 2 Tablespoon | |
| 2 lamb chops, each weighing 175-200 g (6-7 oz) | ||
| Butter | 1 2 Tablespoon | |
| Onion | 1 , sliced | |
| Cider | 250 Milliliter | |
| Zucchini | 175 Gram, sliced | |
| Apple | 1 Small, quartered | |
| Raisins | 1 Tablespoon | |
| Mint | 2 Teaspoon, chopped | |
| Mint sprig to garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Season the flour with salt and pepper and use to coat the chops. Melt the butter in a flameproof casserole, add the chops and fry until browned on both sides. Transfer to a plate.
2. Add the onion to the casserole and fry for 3-4 minutes. Sprinkle in any remaining flour and cook for 1 minute, stirring.
3. Gradually blend in the cider, then add the zucchini, apple, raisins, mint, and salt and pepper and stir well. Return the chops to the casserole with any meat juices, cover and cook in a preheated oven, 190°C/375°F, for 40-45 minutes, until tender.
4. Garnish with mint to serve.
