Lamb Recipe
Ingredients
Serve 6
Ingredient Quantity
Finely Ground Coffee 1/4thcup
Kosher Salt
And Freshly Ground To taste
Black Pepper
Honey 2 Tbsp
Ground Cinnamon 1 Tsp
Ground Cardamom 1 Tsp
Lamb T bone Chops 12 Small
Oil 2 Tbsp
Directions
# Combine the coffee salt pepper, honey, cinnamon, and cardamom.
# Rub Chops all over with the mixture.Leave to marinate at room temperature for about 30 minuts or cover refrigrate up to over nght. If refrigrated allow the chops to come room temprature about 30 minuts before cooking.
# Pre heat the oven to 400d f heat a large cast pan-or heavy skillet. When it begain to smoke add the oil swirling to coat the bottom add the chops browning well all sides transfer the chops to a baking pan and roast 5 minutes or untill the chops are medium rare.
#Remove chops from the oven drape with foil and allow to rest for 5 minutes and then serve.

Sorry, just looked it up you are in Oz a mite far for dinner from California I fear. Lamb is succlent in Australia and you have cooked it perfect nice and pink but not raw and just perfect-I can almost taste it.
