Ingredients

 
16 eggs
 
4 onions sliced and deep fried
 
6 large tomatoes, skinned and deseeded
 
4 green chillies deseeded and finely chopped
 
1 bunch coriander cleaned, washed, finely chopped
 
1 1/2 tablespoons sugarcane vinegar
 
2 tablespoons sugar
 
1 teaspoon red chilli powder
 
1 teaspoon garam masala powder
 
I teaspoon ginger-garlic paste salt
 
3 tablespoons ghee

Directions

1. Take a large heavy bottomed thali. Place the ghee and ginger-garlic paste in it and place over medium heat. Stir for two minutes and add the green chillies, chopped tomatoes, coriander, vinegar, sugar, chilli powder and garam masala and cook till the tomatoes are soft. Sprinkle fine salt and the sliced onions over the tomato mixture and mix well. Flatten the mixture evenly in the thali and make sixteen depressions in the mixture. Lower heat.
2. Break each egg separately in a saucer and slip it on the mixture so that the yolks fall into the depressions. Sprinkle lightly with fine salt. Cover and cook. Do not allow eggs to become hard.
