Ingredients

 
3 eggs, separated
 
1/4 cup honey
 
1/2 teaspoon vanilla extract
 
1/2 cup sifted whole wheat pastry flour
 
1/2 cup sifted unbleached white flour
 
1 tablespoon cornstarch
 
1/8 teaspoon cream of tartar

Directions

Preheat oven to 350°F.
Line 2 baking sheets with parchment paper.
In a large bowl, beat egg yolks until golden.
Add honey and beat for 10 minutes, or until very thick.
Add vanilla.
Sift together whole wheat pastry flour, unbleached white flour, and cornstarch into a medium-size bowl.
Mix with fork to blend well.
Fold flour mixture into egg yolk mixture, a little at a time.
In another medium-size bowl, beat together egg whites and cream of tartar until stiff peaks form.
Fold into batter.
Transfer to pastry bag with about a 3/4-inch opening.
Squeeze onto prepared baking sheets in 3-inch lengths, 1 inch apart (or spoon onto parchment in 1 X 3-inch lengths).
Bake on middle shelf of oven for 10 to 12 minutes, or until lightly browned.
Remove carefully with a spatula, and cool on wire racks.
