Ladyfinger Pickle Recipe

Ladyfinger pickle or bhindi ka achar is a peppy and savory pickle recipe. Made with fresh ladyfingers, this vegetable pickle is cooked with a stuffing of spices like turmeric, red chili pepper, fenugreek, asafoetida and cumin along with curry leaves and lemon juice for flavor.

Ingredients

 
Ladyfingers 25
 
Lemon juice 1 cup
 
Salt for lemon juice 4
 
Fenugreek seeds 2 tsp
 
Red chilli pepper 2 tsp
 
Mustard powder 2 tsp
 
Turmeric powder 1 tsp
 
Asafoctida 1/4 tsp
 
Cumin seeds 2 tsp
 
Salt for masala 8 tsp
 
Curry leaves a few

Directions

1) Cut the head and tail of each ladyfinger and slit on one side.
2) Make a thin paste of ground spices and salt with a little lemon juice.
3) Stuff the ladyfingers with this paste.
4) Fry the curry leaves in hot oil and remove from the pan.
5) Now boil the ladyfingers with 4 teaspoons salt and the rest of the lemon juice.
6) When tender, remove from fire, cool and store in an airtight jar.
