Lady Baltimore Frosting Recipe

Ingredients
2 cups sugar
6 tablespoons cold water
2 tablespoons light corn syrup
1/3 cup (2 large) egg whites
1/2 teaspoon orange extract
1/2 teaspoon lemon extract
1 cup seedless raisins, coarsely chopped
1 cup chopped walnuts
Directions
In top of a double boiler, combine sugar, water, corn syrup, and egg whites; stir until sugar is moistened.
Wash down any crystals with wet brush.
Place over boiling water and at once start beating with a hand rotary or electric beater.
Continue beating, moving beater around, until mixture holds up in peaks.
Remove from hot water and place over cold water.
With final few strokes, beat in extracts.
Set one third of frosting aside.
For filling, stir the raisins and walnuts into remaining frosting.
Spread filling between layers; frost with reserved frosting.
