1/4 cup raisins
 
1 1/3 cups sifted whole wheat pastry flour
 
1 1/3 cups sifted unbleached white flour
 
4 teaspoons baking powder
 
3/4 cup honey
 
2/3 cup vegetable oil
 
1 cup milk
 
1 teaspoon vanilla extract
 
5 egg whites
 
4 cups Seven-Minute Frosting
 
1/2 cup chopped walnuts
 
1/4 cup chopped dried figs

Directions

Preheat oven to 350°F.
Butter and flour bottoms and sides of 2 8-inch layer cake pans.
Place raisins in a small bowl, cover with boiling water, and set aside to plump for 15 to 20 minutes.
Sift together whole wheat pastry flour, unbleached white flour, and baking powder 3 times.
Place into a large bowl.
Mix in honey, oil, milk, and vanilla.
Beat with an electric mixer for 2 minutes.
In a large bowl, beat egg whites, and then fold into batter.
Turn into prepared pans, and bake for 25 to 30 minutes, or until a cake tester or food pick inserted into the center comes out clean.
Cool in pans for 10 minutes.
Remove to wire racks to cool completely.
Spoon 1 cup Seven-Minute Frosting into a medium-size bowl, and add walnuts, drained raisins, and figs.
Spread between cake layers.
Frost top and sides with remaining frosting (or, if desired, use less frosting and frost only top).
