Lacy Pecan Cookies Recipe
Ingredients
| Eggs | 2 | |
| Firmly packed brown sugar | 1 1/3 Cup (16 tbs) | |
| All purpose flour | 5 Tablespoon | |
| Salt | 1/8 Teaspoon | |
| 1/8 tsp. double-acting baking powder | ||
| 1 tsp. real vanilla | ||
| Pecans and walnuts | 1 Cup (16 tbs), chopped | |
Directions
1. Heat oven to 375°. Grease and dust with flour 2 cookie sheets.
2. In a mixing bowl, beat the eggs until foamy and light. Whisk in the brown sugar, and mix well.
3. In a separate bowl, sift or whisk together the flour, salt, and baking powder. Combine the flour mixture into the egg mixture in two additions, beating only as much as necessary to incorporate the ingredients. Stir in the vanilla and nuts.
4. Drop batter by half-teaspoon onto the prepared cookie sheets, spacing well apart; these spread quite a bit. Bake about 8 minutes.
