Moroccan Laasida Recipe Video

Recipe Story

It is a maghreb al watan food popular in north Africa. It is similar to mesfouf or porridge. It is a classic recipe loved by Moroccans and considered as a childhood memory of Eid Breakfast at the end of Ramadan.

Ingredients

 
1 box (10 oz) of plain couscous
 
6 cups of water
 
1 teaspoon of salt
 
2 tablespoons of butter
 
Honey - to serve.
 
Butter - to serve

Directions

MAKING
1. In a cooking pan, pour the water and add the couscous.
2. Cover and bring to boil on medium heat, for about 10 minutes until the mixture has thickened.
3. Stir in the salt and butter.
4. Reduce the heat to low and let the Laasida cook for 20-30 minutes, stirring from time to time.
5. When Laasida is cooked to the consistency of mashed potato, take the pan off the heat.

SERVING
5. Serve the Laasida immediately with butter and honey to taste.

Alia I made this for Ramadan and I loved it. Its nutritious, comforting and yummy and kept me going through the day of fasting. I also added raisins and almonds to the laasida and I used semolina instead of couscous cause that takes shorter time to cook.
