Ingredients
6 oz of boneless chicken
½ to ¾ cup of chicken broth(low sodium)
1 small green pepper, cut into cubes
1-2 tbsp of sugar (I like the sweet taste so prefer to have a little more sugar)
3 onions, sliced thin and long
1 tbsp red wine vinegar
1 tbsp cornstarch (optional)
½ cup pineapple pieces of 1” each (optional)
2 tbsp tomato ketchup
Cooking spray (non-fat)
Directions
Cut the chicken into cubes of 1” each. Take a skillet or saucepan and add in the cooking spray. Now add the onions and green pepper. Saute till the vegetables are tender. Add in the chicken pieces and stir fry. Saute till the chicken is well-cooked. Add in the red wine vinegar, vinegar and the sugar. Stir. Add the chicken broth and cook till the sauce thickens (if the sauce is very thin in consistency you could add cornflour mixed in water to thicken it. Let it coat the chicken pieces and vegetables well. Serve with rice or noodles.
