Ingredients

 Salt1 Teaspoon
 Cornstarch1 Teaspoon
 Sherry2 Teaspoon
 3/4 pound boned raw chicken, diced
 Cooking oil1/2 Cup (16 tbs)
 Vegetable1 Tablespoon
 2 dried mushrooms, soaked and diced
 Green peppers2 Small, diced
 Red chili1 , diced
 Bamboo shoot1 , diced

Directions

Mix first 3 ingredients.
Add chicken and stir to coat well.
Saute chicken in 1/4 cup oil for 2 minutes.
Remove chicken.
Add remaining oil to skillet.
Add vegetable paste and saute for 1 minute.
Add mushrooms, pepper, chili, and bamboo shoot and saute for 1 minute.
Add chicken and heat, stirring.
Serve at once.
