Kwangtung Braised Spareribs Recipe

Ingredients

 
1/2 kg. spareribs 5 cm. (2 inch) length
 
2 spring onions, finely sliced
 
2 medium onions, finely chopped
 
3 tbsps. light soya sauce
 
3 tbsps. sherry (optional)
 
1 1/2 tsps. sugar
 
2 tsps. salt
 
1 tsp. five spice powder
 
1/2 tsp. pepper freshly ground
 
2 tbsps. cornflour
 
2 tsps. chilli oil
 
1/2 cup apple juice
 
1/2 cup orange juice or sweet lime juice
 
1/2 cup tomato sauce
 
1 cup secondary broth
 
1/2 cup vegetable oil

Directions

Separate all spareribs, wash and dry.
Mix together in a bowl soya sauce, salt, pepper, sugar, and five spice powder.
Add spareribs and rub well with the mixture.
Marinate for 30 minutes.
Sprinkle cornflour and mix well.
Heat oil and fry spareribs over medium heat for 25 minutes until colour turns golden.
Drain off excess oil, set aside.
Add little more oil if required and saute onions for 2 minutes add fried spareribs with all juices, tomato sauce, chilli oil, and sherry.
Mix well.
Pour in secondary broth, bring to the boil, simmer until thickened.
Serve hot with rice.
Note: If you want spicy spareribs then use 1-2 tablespoons dry red chilli powder while marinating.
VARIATION:
Spareribs with Barbeque Sauce:
Omit fruit juices and tomato sauces.
Omit secondary broth.
Proceed till stage 5 as given in the above recipe.
Add 2 cups barbeque sauce.
Serve hot with rice.
VEGETARIAN VERSION:
Use gluten or cottage cheese.
Cut them into size of spareribs.
Omit secondary broth.
Use barbeque sauce and proceed as above.
