Ingredients

 1/4-cup chopped citron
 Brown sugar21/2 Cup (16 tbs)
 1/2-lb. rhubarb in 1" pieces
 Onion1 Large, chopped
 Seedless raisins1 Cup (16 tbs)
 Celery1 Cup (16 tbs), diced
 Hot Sauce1 Tablespoon
 Grated peel and juice of 2 tspns. root
 Ginger orange1 , chopped
 Powdered ginger1 Teaspoon, powdered
 Kumquats1/2 Pound
 Honey1/2 Cup (16 tbs)
 Water1/2 Cup (16 tbs)
 2 tspns. salt
 Vinegar3 Cup (16 tbs)
 Green pepper1 To taste, chopped
 Garlic2 Clove (5gm)
 Chopped

Directions

Remove seeds from kumquats and cut into slices.
Add the honey and simmer for 30 mins.
Add vinegar, brown sugar, rhubarb, onion.
Add all the other ingredients and simmer for 1 hour, or until thick.
