Directions

GETTING READY
1 Using a mortar and pestal, grind together Sugar and Saffron.

MAKING
2 In a large mixing bowl, combine sweetened condensed milk, evaporated milk, heavy whipping cream and cool whip.
3 Using an electric hand blender (or by hand), gently mix all ingredients together.
4 Add in saffron and sugar mixture and nuts, mix well.
5 Into small dixie style plastic cups, pour the mixture.
6 Cover cups with foil and insert a wooden popsicle stick into the center.
7 Freeze Kulfi for at least 4 - 6 hours, preferably overnight.

SERVING
8 Serve chilled in individual dishes.

TIPS
Kulfi can also be molded in a popsicle maker or fancy shaped ice cube trays.
Kulfi has a very long shelf life so keep some on hand for an instant dessert option when guests are over.

There is nothing more heavenly than kulfi. From kids to elderly people, everyone loves this Indian ice-cream. They are better made at home as readymade ones are adulterated due to expensive ingredients. It’s quiet easy to make and have a long shelf life. I prepare them well in advance for parties or anytime when I am free, they come in handy when there is no sweet dish to serve.

I love this recipe..I made it last about a year ago, everyone loved it. I was wondering did you recommend elaichi in it before or has it always been without it? I seem to remember putting elaichi in..? About to make it again and was hoping I get a response. Thank you=)

Cool Whip in this particular "quick and simple" recipe makes the kulfi light and fluffy, even after it has been frozen. Many of the traditional kulfis which are cooked are a lot more dense in texture. Although we have never tried it, you could probably get heavy whipping cream and actually whip it, and then add it in.
