Kulajda Recipe

Ingredients

 
3/4 pound mushrooms, thinly sliced
 
2 tablespoons each butter and olive oil
 
1/4 teaspoon each garlic powder, white pepper, salt and crumbled dried oregano
 
Dash cayenne pepper
 
1 teaspoon caraway seeds (optional)
 
2 teaspoons fresh lemon juice
 
1-1/2 tablespoons unbleached flour
 
1 teaspoon paprika
 
3 tablespoons minced fresh parsley
 
5 cups stock of choice
 
1 cup sour cream
 
2 or 3 egg yolks
 
Minced fresh dill or caraway seeds
 
Paprika

Directions

Saute mushrooms in butter and oil, seasoning while they are cooking with garlic powder, white pepper, salt, oregano, cayenne pepper, caraway seeds and lemon juice, until mushrooms are golden.
Sprinkle with flour and paprika and cook, stirring, 3 minutes.
Add parsley and gradually add stock.
Cook and stir until slightly thickened.
Cover and simmer 15 minutes.
Beat together sour cream and egg yolks, whisk in 1/2 cup hot soup and return to rest of soup.
Reheat without boiling and adjust seasonings to taste.
Sprinkle with dill or more caraway seeds (if used) and paprika.
