A fajita is a dish from the Tex Mex cuisine. It consists of grilled meat, served over a corn tortilla along with lettuce, cheese, tomatoes, salsa and sour cream. This dish makes a nice and quick meal. It can a meal in itself or can be served with a side dish also.

Ingredients

 
Marinade Ingredients:
 
1 tbsp Salt
 
1 1/2 tsp. Cayenne Pepper
 
1 1/2 tsp. Paprika
 
1 tsp. Black Pepper
 
1 lb. Skirt Steak
 
1/3 C Orange Juice
 
1/3 C Dry Sherry
 
3 tbsp Brown Sugar
 
2 tbsp Olive Oil
 
2 Garlic Cloves (minced)
 
1/4 tsp Crushed Red Pepper Flakes

Directions

1. Combine the salt, cayenne pepper, paprika, black pepper together in a bowl.
2. Rub this mixture on both sides of the steak.
3. Stir the orange juice, sherry, brown sugar, olive oil, garlic, and red pepper flakes together in a larger bowl.
4. Place the meat in the bowl and let marinate overnight or during the day.
5. Preheat an indoor grill pan on high heat.
6. Remove the meat from the marinade and pat dry with paper towels.
7. Grill the steak for about 5 - 6 minutes on each side.
8. Slice the meat and serve with your favorite fajita sides.
