Koeksister Recipe

Koesister are South African cookies dipped in syrup made for snacking. The best way to serve them is when they are cold. These cookies can be served with tea or coffee or just all alone. They taste good both ways.

Ingredients

 Warm water2 Tablespoon
 Cake yeast, active dry or compressed-1 package
 Enriched flour-3 cups, sifted
 Brown sugar1 Cup (16 tbs), firmly packed
 Butter/Margarine1/2 Cup (16 tbs)
 Cinnamon2 Teaspoon
 Allspice1 Teaspoon
 Salt1/2 Teaspoon
 Eggs4 Small, beaten

Directions

MAKING
1)In a large mixing bowl, add water and dissolve yeast.
2)In another bowl, add flour and sugar. Cut in butter or margarine.
3)Add cinnamon, allspice and salt and mix thoroughly.
4)Add eggs and yeast and beat well.
5)Knead the dough on a lightly floured board until smooth and satiny, adding more flour if necessary.
6)Take a lightly greased bowl and put the dough in it. Cover.
7)Let rise in a warm place for about 2 hours.
8)Knead lightly again and roll out on a lightly floured board about 1/4 inch thick.
9)Cut in 1 1/2-inch squares.
10)Take a lightly greased baking sheet and let it rise in a warm place overnight.
11)In a pan, heat fat and fry cookies until brown on both sides. Drain.
12)When cool dip in following syrup. Drain on a cooling rack.

SERVING
13)Serve the cookies when dry.
