Ingredients

 
Noodles Ingredients:
 
1 cup all purpose flour
 
1/3 cup cold water
 
1/4 tsp salt
 
1 tsp oil
 
Sauce Ingredients:
 
1/2 tbsp soy sauce
 
1/2 tbsp sesame oil
 
green onion (chopped)
 
1/4 tsp red chilli powder
 
1/4 tsp ginger
 
1/4 tsp garlic
 
Soup Ingredients:
 
4-6 cups Chicken stock
 
1 small potato (chopped)
 
1 medium onion (sliced)
 
1 squash (cubed)
 
chicken (cubed)
 
Garnish:
 
squash strips

Directions

In a bowl, add all the noodle ingredients, mix well and knead into a dough for about 10 min. cover the bowl with a foil and keep aside for about 30 min.
Chop off the ends of the squash, deseed and chop into small pieces. Cut a little portion of the skin into strips, place on a small plate, sprinkle salt and keep aside for the garnish.
In another bowl, add all the sauce ingredients and mix well.
Turn out the dough on a floured board, roll out a thin sheet with the rolling pin. Fold the sheet over a few times and cut out the noodle strips with a knife.
In a pan, boil the chicken stock, add the potato, chicken, onion, squash pieces, bring to a boil and add the noodles into the pan and simmer until cooked.
Serve in a large bowl, spoon in the sauce and garnish with the squash strips.
