Kiwi Fruit Cream Cheese Pie Recipe
Ingredients
1 Baked Pie Shell
3 to 4 Medium Kiwis, soft
1/2 Cup Water
1 1/4 Cups Sugar
3 Tbs. Cornstarch
1 3 Oz. Pkg. Cream Cheese, softened
1 Squirt (1/2 Tsp. approximately) Lemon Juice
Directions
Liquefy peeled kiwi fruit.
Simmer kiwi fruit and water about 3 minutes.
Blend in sugar and cornstarch.
Boil 1 minute, stirring constantly.
Cool.
Spread cream cheese over bottom of cooled pie shell; cover with cooked mixture.
Refrigerate until firm (about 2 hours).
Serve with whipped cream or ice cream.
