Kiwi Strawberry Chicken Recipe
Ingredients
| California Strawberries - 2 cups, halved | ||
| Kiwifruit | 1 , peeled | |
| Cantaloupe | 2 Cup (16 tbs), cubed | |
| Tarragon | 2 Teaspoon, chopped | |
| Olive oil | 1/4 Cup (16 tbs) | |
| Shallots | 1/4 Cup (16 tbs), chopped | |
| Raspberry vinegar | 1/4 Cup (16 tbs) | |
| Ground black pepper | 1/2 Teaspoon | |
| Chicken breasts | 1 , halved | |
Directions
MAKING
1) In a medium-sized bowl add in the strawberries, kiwis, cantaloupe and fresh tarragon. Mix well.
2) Cover and refrigerate the bowl for 2 hours.
3) In a saucepan, heat oil. Add in the shallots and saute till they become soft.
4) Add in the vinegar and pepper.
5) Let the mixture come to a boil.
6) Drizzle the hot dressing over the chilled fruits. Stir well.
7) Grill the chicken breasts.
SERVING
8) Add the warm fruit compote over the hot chicken breasts.
