Kidneys With Mushrooms (Rognoni Con Funghi) Recipe
Ingredients
4 veal kidneys
1 lb (500 g) button mushrooms
4 tablespoons olive oil
salt and pepper
Directions
Remove fat and membranes from the kidneys.
Slice in 1/2 inch (1 cm) slices and soak in cold salted water for ten minutes.
Rinse, drain and dry.
Wipe the mushrooms with a damp cloth and saute with the kidneys in the oil over a low heat for about seven minutes.
Stir occasionally.
