Kidneys Liege Style Recipe

Ingredients

 
1 1/2 pounds veal kidneys
 
1 teaspoon salt
 
Freshly ground black pepper
 
8 juniper berries, finely crushed
 
3 tablespoons butter
 
1/2 cup hot water
 
2 slices white bread, crusts removed
 
1 tablespoon butter

Directions

Simmer kidneys in boiling salted water for 8 minutes.
Rinse.well under cold running waterand dry thoroughly.
Mix the salt, pepper and juniper berries and rub the kidneys with this mixture.
Heat the 3 tablespoons butter and saute the kidneys 15 minutes over low heat.
Add water, cover and simmer 10 minutes.
Cut each slice of bread into 4 squares and saute in 1 tablespoon hot butter until brown on both sides.
