Ingredients

 1 veal kidney, about 1 lb.
 Onion2 Tablespoon, finley chopped
 Parsley1 Tablespoon, finely chopped
 Flour1/2 Teaspoon
 Salt1/4 Teaspoon
 Few grains pepper
 Port wine1 Tablespoon
 Buttered toast squares (slice bread, crusts removed, for 4 toast squares)

Directions

Remove the membrane and hard parts from the kidney; cut kidney into small pieces.
Put into a pan with onion and parsley; cook 10 minutes, stirring constantly.
Blend flour, salt, and pepper; add to kidney mixture; stir in the wine.
