 Beef kidney1 , sliced
 Whole wheat flour3 Tablespoon
 Oil3 Tablespoon
 Tomatoes1 Quart, stewed
 Salt1 Teaspoon
 Nutritional yeast3 Tablespoon
 Tarragon1⁄2 Teaspoon
 Honey1 Teaspoon
 Bay leaf1
 Celery seeds1⁄4 Teaspoon
 Parsley1 Tablespoon, minced
 Onion1 , grated
 Garlic1 Clove (5 gm), minced
 Cinnamon1⁄4 Teaspoon, ground
 Green pepper1 , minced
 Celery leaves1⁄2 Cup (8 tbs), chopped
 Mushrooms1⁄4 Cup (4 tbs), sliced
 Soy grits1⁄4 Cup (4 tbs), soaked in 0.25 cup stock

Directions

Dredge kidney in flour and saute in oil.
Put in oiled casserole.
Combine remaining ingredients and pour over kidney.
Cover.
Bake at 250° F. for about 1 1/2 hours, until kidney is tender.
