Kidney With Paprika Flavor Recipe

Ingredients

 
1 1/2 pounds kidneys
 
1 1/2 teaspoons salt
 
1 teaspoon paprika
 
3 tablespoons butter
 
3/4 cup red wine
 
Garnish:
 
1 pound bacon
 
2 yellow onions, thinly sliced
 
2 green peppers, cut in strips
 
4 tomatoes in wedges

Directions

1. Rinse the kidneys, dry with absorbent paper towel and cut in slices 1 -inch thick. Cut the slices in rather thick pieces. and season with salt and paprika.
2. Fry the kidney pieces till they are light brown.
3. Add the wine, lower the heat, and let the kidneys simmer, covered, about 10 minutes.
4. Meanwhile fry the bacon with the onion slices, the pepper strips, and the tomato wedges in another frying pan without any butter. Stir with a spatula until the mixture is soft but has not turned color.
5. Season with salt if necessary. Pour the kidneys in the middle of a hot serving dish and arrange the garnish around the edges.
