Classic Veal Kidney Soup Recipe

Ingredients
1 veal kidney (about 1/2 pound)
4 cups beef broth
1/2 teaspoon salt
Freshly ground black pepper
3 tablespoons butter
1 tablespoon finely chopped onion
4 tablespoons flour
1 cup cream
1 cup thinly sliced mushrooms
2 tablespoons Madeira or dry sherry
Directions
Soak kidney in cold water 2 hours, changing the water twice.
Drain and slice kidney thinly.
Add the slices to the beef broth and season with salt and pepper.
Bring to a boil, lower the heat and simmer 30 minutes.
Strain the broth.
Heat the butter in a skillet and saute the onion until golden.
Add the flour and cook, stirring for 1 to 2 minutes.
Add the cream and broth slowly, stirring with a wire whisk to form a smooth soup.
Return the kidneys to the soup, add the mushrooms and cook 10 minutes more.
