Ingredients

 1/4 cup imitation mayonnaise
 Prepared mustard2 Teaspoon
 Onion4 Ounce, finley diced
 Celery1 Cup (16 tbs), diced
 Red kidney beans12 Ounce, canned
 Cucumber1 Medium, pared
 Lettuce leaves4
 4 medium eggs, hard-cooked and quartered
 Cucumber1 Medium, sliced
 Capers1 Teaspoon

Directions

In bowl combine first 4 ingredients in order given.
Add kidney beans and diced cucumber; chill.
Divide evenly onto lettuce leaves; surround each with one egg and 1/4 of the cucumber slices.
Garnish with capers.
