Kidney Bean And Egg Salad Recipe
Ingredients
| 1/4 cup imitation mayonnaise | ||
| Prepared mustard | 2 Teaspoon | |
| Onion | 4 Ounce, finley diced | |
| Celery | 1 Cup (16 tbs), diced | |
| Red kidney beans | 12 Ounce, canned | |
| Cucumber | 1 Medium, pared | |
| Lettuce leaves | 4 | |
| 4 medium eggs, hard-cooked and quartered | ||
| Cucumber | 1 Medium, sliced | |
| Capers | 1 Teaspoon | |
Directions
In bowl combine first 4 ingredients in order given.
Add kidney beans and diced cucumber; chill.
Divide evenly onto lettuce leaves; surround each with one egg and 1/4 of the cucumber slices.
Garnish with capers.
