 3 tablespoons plain fat-free yogurt
 2 tablespoons seeded shredded cucumber
 Salt1 Dash
 Boiling water1/4 Cup (16 tbs)
 1/4 cup uncooked bulgur or cracked wheat
 Salt1/8 Teaspoon
 Lean ground lamb6 Ounce
 Parsley3 Tablespoon, chopped
 Onion3 Tablespoon, finley chopped
 Pine nuts1 Tablespoon, chopped
 Salt1/4 Teaspoon
 Pepper1/4 Teaspoon
 Dash of ground cinnamon
 Dash of ground allspice
 Garlic1 Clove (5gm), minced
 Cooking spray
 1 (8-inch) pita bread round, cut in half crosswise
 2 curly leaf lettuce leaves
 Alfalfa sprouts1/2 Cup (16 tbs)

Directions

GETTING READY
1. Preheat your oven to 350°F

MAKING
2. In a small bowl, combine the yogurt, cucumber and salt and blend them well; cover the bowl and chill it for a while
3. In another bowl, combine bulgur, one-eighth of a teaspoon of salt and boiling water and mix them well
4. Let it stand for fifteen minutes for the liquid to be absorbed
5. In yet another bowl, combine the lamb with the bulgur and also add parsley, onion, pine nuts, garlic, cinnamon, salt and pepper and allspice
6. Shape this mixture into 10 balls of 1.5", place them on a broiler coated with cooking spray and bake it ion the oven for twenty minutes

SERVING
7. Line the pitas with a leaf of lettuce, place a quarter cup of sprouts and five meatballs
8. Spoon some of the cucumber mixture over the meatballs and serve
