Khimo ( Minced Mutton ) Recipe

500 gms. minced meat
2 large onions
300 gms. cubed potatoes
2 carrots chopped into dice
3 green chillies
1/2 bunch coriander
2 ripe red tomatoes
1 teaspoon turmeric
1 1/2 teaspoons chilli powder
2 teaspoons sugar
2 dessertspoons vinegar
1 1/2 teaspoons ginger-garlic paste,salt,ghee
Directions
1. Marinate the minced meat in salt and ginger-garlic paste. Cover and keep aside.
2. Chop the onions finely and fry till golden brown. Then add the spices and mince and stir till the meat is dry; add the vegetables after which put in 2 1/2 cups of water and allow to simmer over a low flame for 35 minutes.
3. When the water has been absorbed and the mince cooked add the chopped tomatoes, coriander, sugar and vinegar and cook for 10 minutes more. Cover and set aside.
