KHEER Recipe

A yummy traditional Indian rice kheer recipe (rice pudding). The quick and easy to make kheer is rice simmered and cooked in milk and an array of rich ingredients. Just the dessert you need to complete your Indian meal menu.

Ingredients

 
MILK 1.2 LITRE
 
Washed LONG GRAIN RICE, 75 GRAMS
 
SUGAR 125 GRAMS
 
RAISINS 75 GRAMS
 
Cut into small pieces DRIED APRICOTS 40 GRAMS
 
Bruised SEEDS OF 6 CARDAMOMS
 
CINNAMON STICK 2 CM
 
Blanched SILVERED ALMONDS OR PISTACHIOS 40 GRAMS
 
ROSE WATER 10 ML

Directions

1. Boil the milk and add the rice. Stir over a high heat for 1 minute, then turn the heat as low as possible and continue to cook for a further 15 minute, stirring occasionally.
2. Add the sugar, raisins, cardamom and cinnamon. Cook for 10 minute, stirring from time to time.
3. The dried fruit will plump up and the pudding will thicken.
4. Stir in most of the almonds and cook for another 10 minutes
5. Leave until cold, then mix in the rose water.
6. The kheer will now have a thick pouring consistency.
7. Put the kheer into a shallow glass bowl or individual bowls.
8. Sprinkle the top with the remaining almonds and chill.
9. Kheer may also be decorated with edible gold or silver leaf, bought from Indian grocers.
You can serve hot or cold.
