Ingredients

 
1 kg boneless meat, cut into bite sized cubes
 
Salt and pepper to taste
 
1 tbsp raw papaya juice
 
4 tbsp groundnut oil
 
finely grated rind and juice of 1 sweet lime
 
3 tbsp brown sugar
 
2 tbsp malt vinegar and tamarind juice
 
1 tbsp molasses
 
3 green chillies, finely chopped
 
2 tsp ginger paste
 
1 tsp capsico sauce

Directions

1 Wash and dry the meat cubes thoroughly. Rub salt, pepper and papaya juice into the meat well. Combine rest of the ingredients and marinate the meat in it for 24 hours. Refrigerate and turn a few times in between. Let stand at room temperature for 1-2 hours before use.
2 Thread the pieces of meat onto shewers and barbecue over hot coals or use a tandoor or grill in an oven. Turn the skewers regularly to ensure even cooking and brush frequently with the marinade. Cook till done.
3 Garnish with onion, cucumber and lemon rings.
