Khao Phad Recipe

TheKhao Phad is a lovely meat dish that is both filling and yummy. I served this for an informal get together for dinner and everyone loved it. Try the Khao Phad at home and you will understand why!

Ingredients

 
850 g cooked rice (preferably made the previous day and chilled)
 
100 ml vegetable oil
 
150 g onion, finely chopped
 
4 flakes garlic, finely chopped
 
1 tsp sugar
 
15 g red curry paste (readymade or made as given below and stored)
 
500 g prawns, steamed
 
3 eggs, lightly whisked
 
15 ml chilli sauce
 
30 ml fish sauce
 
1 green pepper (capsicum),sliced
 
50 g French beans, finely sliced
 
30 g spring onions, chopped
 
1 tomato, chopped

Directions

Heat the oil in a large bottomed wok, over medium heat.
Saute the onions and garlic till golden brown.
Add the sugar and curry paste and stir-fry until the sugar has dissolved.
Stir in the prawns and mix well to coat with the red chilli paste.
Push to one side of the wok, away from the centre.
Add a little more oil if required and pour in the beaten eggs.
Wait until they just begin to set, then lightly scramble.
Add the chilled rice and stir till heated through.
Add the chilli sauce and the fish sauce.
Add the capsicum, French beans, spring onions and the tomato.
Stir-fry, but allow the vegetables to retain some of their texture without becoming too soft.
Remove from heat and serve hot.
