Key Lime Yogurt Pie Recipe

| Graham cracker crumbs | 1 1/4 Cup (16 tbs) | |

| Apple juice concentrate | 1/2 Cup (16 tbs), frozen | |
| Unflavored gelatin | 1 | |
| Granulated Sugar | 1/3 Cup (16 tbs) | |
| Lime juice | 1/3 Cup (16 tbs) | |
| Lime rind | 2 Teaspoon, freshly grated | |
| Vanilla extract | 1/4 Teaspoon | |
| 1 1/2 cups low-fat plain yogurt | ||
| Fresh lime slices | ||
Directions
In a small bowl combine crumbs and margarine; mix well.
Over bottom and side of a pie plate press the crumb mixture.
Freeze.
Into a saucepan pour apple juice.
Sprinkle with gelatin.
Let stand for several minutes or until gelatin is softened.
Add sugar.
Cook over low heat until gelatin and sugar dissolve, stirring constantly.
Into a mixer bowl pour the gelatin mixture.
Add lime juice and rind and vanilla.
Chill until the mixture resembles raw egg whites.
Beat until fluffy.
Add yogurt; beat until fluffy.
Into the prepared crust pour the yogurt mixture.
Chill until firm.
Garnish with lime slices.
