Chilled Key Lime Pie Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Sugar | 1/2 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Egg yolks | 4 | |
| Lime | 1 Teaspoon, grated | |
| Lime juice | 1/2 Cup (16 tbs) | |
| Water | 1/4 Cup (16 tbs) | |
| Green food coloring | ||
| Egg whites | 4 | |
| Whipping cream | 1 Cup (16 tbs) | |
| 1 baked 9-inch pastry shell, cooled | ||
Directions
In saucepan combine unflavored gelatin, 1/2 cup sugar, and salt.
Beat egg yolks, lime juice,and water till blended; stir into gelatin.
Cook over medium heat, stirring constantly, just till mixture comes to boiling.
Remove saucepan from heat; add grated lime peel.
Add enough drops of green food coloring to give pale green color; mix thoroughly.
Chill, stirring occasionally, till mixture mounds when spooned.
In bowl beat egg whites till soft peaks form.
Gradually add 1/2 cup sugar; beat till stiff peaks form.
Fold chilled lime gelatin mixture into stiffly beaten egg whites.
Whip cream till soft peaks form; fold into gelatin-egg white mixture.
Pile filling into cooled baked pastry shell.
Chill till firm.
Garnish with additional whipped cream, lime peel, chopped pistachio nuts, and lime wedges, if desired.
