Classic Key Lime Recipe
|Unflavored gelatin||1 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Lime juice||1⁄2 Cup (8 tbs)|

|Grated lime peel||1 Teaspoon|
|Green food coloring||6 Drop|
|Whipping cream||1 Cup (16 tbs), whipped|

In mixer bowl, beat egg yolks, lime juice, and water; stir into gelatin.
Cook at MEDIUM (5) for 4 to 5 minutes or just till bubbly, stirring every 30 seconds.
Add lime peel and food coloring; mix well.
Chill, stirring occasionally, till mixture mounds slightly when dropped from spoon.
When gelatin mixture nearly mounds, beat egg whites to soft peaks.
Gradually add 1/2 cup sugar; beat to stiff peaks.
Fold gelatin mixture into egg whites.
Fold in whipped cream.
Pile into baked pastry shell.
Garnish with additional whipped cream and lime wedges.
