Kentucky Hush Puppy Muffins Recipe

| Whole wheat pastry flour | 1/2 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Onion | 1 Medium, chopped | |
| Bacon Slices | 2 , chopped | |
| Eggs | 2 Large, beaten | |
| Oil | 1 Tablespoon | |
| Honey | 1 Tablespoon | |
| Buttermilk | 1 1/4 Cup (16 tbs) | |
| 3 Tbsp. to mato Sauce | ||
Directions
Stir together cornmeal, flour, baking powder, soda and salt in a large bowl.
Mix in the chopped onion (and bacon pieces, if desired).
Whisk eggs, oil, honey, buttermilk and tomato sauce in another bowl.
Combine the two just until mixed.
Spoon into greased muffin cups and bake until tops begin to turn golden brown.
Bake at 375 degress 20 to 25 minutes
