Frozen Rock Cornish hens-8 , (1pound)
Fresh mushrooms-1 box
Butter or margarine- as needed
Salt-to taste
Pepper-to taste
Beau Monde seasoning-as needed
All-purpose flour-1/4 cup
Onion-1 small, chopped
Chicken broth-1, (14-ounces) can
White wine-1 1/4 cups
Dry wine-1 1/2 cups
Parsley-2 tablespoons, chopped
Bay leaf-1
Crumbled basil-1/2 teaspoon
Thyme-1/2 teaspoon
Cornstarch-2 tablespoons
Cold water-1/4 cup
Brown sugar-1 cup
Cornish game-4 small
Directions
MAKING
1)In a saucepan, melt butter and sauté mushrooms.
2)Rub the insides of the hens with salt, pepper and Beau Monde seasoning.
3)Coat outside lightly with flour.
4)Take a large frying pan, melt 5 tablespoons butter and brown hens.
5)Take a large roasting pan and put the hens.
6)In the same frying pan, sauté onion in pan drippings until soft.
7)Add broth, wine, parsley, bay leaf, basil, thyme, 1/2 teaspoon salt and 1/4 tea- spoon pepper.
8)Pour into roasting pan and cover the pan.
9)Bake at 350 degrees for 1 hour or until hens are tender.
10)Remove hens and keep warm.
11)In a small bowl, mix cornstarch and water and put in roasting pan.
12)Cook until sauce thickens and then boil for 3 minutes. Keep stirring.
13)Remove bay leaves and add mushrooms.
