Ingredients
Rice 2 cups
Coconut milk 3 cups
Ghee 1 tsp
Cumin seeds 1 tsp
Cloves 1 tsp
Cinnamon 1 inch piece
Salt to taste
Directions
Clean, wash and drain the rice.
Prepare the coconut milk by extracting juice from fresh grated coconut or using ready mix coconut milk powder.
Meat the ghee in a pressure pan and place all the dry spices in it.
Saute till the aroma engulfs the kitchen.
Add the rice to it and saute till the grains look translucent.
Pour in the coconut milk and add 3 cups of water and cook uncovered.
Add extra water if required.
This rice tastes better if slightly overcooked and soft.
When the rice is almost done add the salt.
Stir, occasionally to prevent burning and cook throughout on a low name.
Now you know why this is a healing food; because of all the dedication that goes into preparing it.
