Directions

GETTING READY
1) Add most of the whole tomatoes to a blender and make a paste.
2) Add the paste back into the bowl with the rest of the whole tomatoes.

MAKING
3)To a large pot, add a couple of teaspoons of olive oil on medium heat.
4) Add onions and mushrooms to hot oil, stir and allow to caramelize.
5) Stir in garlic and leave for a minute.
6) Add canned tomatoes and combine well.
7) Add dry spices and combine.
8) Add tomato paste.
9) Add water so that sauce does not become too thick.
10) Cover and allow to simmer for 3 hours.

SERVING
11) Serve on pasta garnished with fresh herbs and grated cheese.
