Kasha ( Buckwheat ) Recipe
Ingredients
1 tablespoon butter or margarine
1 egg, beaten
1 cup whole buckwheat groats
2 1/2 cups water or beef bouillon
1/2 teaspoon salt
1 teaspoon ground coriander
1 teaspoon ground cumin
Directions
Melt butter or margarine in a medium saucepan.
In a small bowl, combine egg and buckwheat.
Add to butter.
Cook over medium heat, stirring constantly, until egg is cooked and buckwheat groats are dry and separated.
Add water or bouillon, salt, and spices.
Bring to a boil, and then reduce heat to low.
Cover and simmer until tender.
NOTE: Cracked wheat or cracked rye may be substituted for the buckwheat.
Maindish Kasha Add 1 cup cubed, cooked meat.
A chopped and sauteed onion may be added.
Selected additions of almonds, mushrooms, and chopped turnips are also delicious.
