2 cups (480 ml) Kasha, whole or coarse, prepared according to package directions, using chicken or vegetable broth
 
4 cups (960 ml) chicken or vegetable broth
 
8 oz (240 g) white cheddar or Monterey Jack cheese, 1/4-inch cubed
 
15-oz can (450 g) black beans, drained and rinsed
 
1/2 cup (120 ml) thinly sliced celery
 
1/2 cup (120 ml) diced sweet red pepper
 
1/4 cup (60 ml) diced green pepper
 
1/4 cup (60 ml) sliced red onions
 
1/4 cup (60 ml) chopped fresh basil
 
1/2 cup (120 ml) bottled or homemade Dijon vinaigrette
 
2 cups (480 ml) fresh spinach, cut into strips and additional leaves for garnish
 
4 slices bacon, fried crisp and crumbled

Directions

In a large nonmetal bowl, combine kasha, cheese, black beans, celery, peppers, onions and basil.
Mix well, then add vinaigrette and toss.
Cover and chill for at least 2 hours.
Before serving, add spinach; toss.
Arrange additional spinach leaves in salad bowl or on platter.
Top with salad and sprinkle with bacon.
