Karkaria ( Banana Fritters ) Parsi Style Recipe

Ingredients
3 green skinned ripe bananas weighing
200 gms. sugar
200 gms. maida
100 gms. wheat flour
25 gms. raisins
2 eggs
1/2 teaspoon vanilla essence
1/2 teaspoon cardamom-nutmeg powder, ghee
Directions
1. Mash the bananas. Add the sugar, essence and cardamom-nutmeg powder. Beat in the eggs and whisk the mixture well.
2. Gradually add in wheat flour, maida and the raisins.
3. Heat half a kadhai of ghee and when it gets hot, lower the flame and take one tablespoonful of mixture at a time and gently lower it into the ghee. It will puff up and when it becomes golden brown in colour turn over with the help of two forks and allow to cook through. Do not over fry. Drain on an absorbent paper and serve immediately with tea.
