Recipe Story

Ingredients

 
4 karela
 
2 tsp Red chilli powder
 
2 tbsps Cumin powder
 
Salt as per taste
 
2 tbsps Coriander powder
 
2 tbsps Dry mango powder
 
1 tsp Turmeric powder
 
2 tbsps Oil
 
1 cups Onions (sliced thick)
 
1 cup tomato puree

Directions

Clean, wash and wipe karela absolutely dry. Remove half a centimeter from both ends. Slit and keep aside. Mix red chilli powder, coriander powder, cumin powder, dry mango powder, turmeric powder and salt. Stuff the karela/bittergourd with this masala. Keep the left-over masala separately. Heat oil in a kadai. Add sliced onions and cook for 1/2 a minute. Add stuffed karela/bittergourd. Cook covered on low heat. Stir occasionally. Add
rest of the dry masala when karela/bittergourd is almost cooked. Add tomato puree. Cook covered on low heat till karela/bittergourd are fully cooked and tender.
Tips
Soak karela/bittergourd in salted water to reduce bitterness for 3-4 hours.
Ensure that you do not add any water to this vegetable.

hi sonali iam crazy for karelas but unfortunately when ever i make this they turn out very bitter.i haven't tried it with tomatoes,but will try acc. to ur receipe. any remedy to remove the bitterness,have tried marination of salt & haldi, dipped in sour curd but of no use.Pl. do reply on my mail i.d.Thanks.

Hi, it is not neccessary to tie a thread as the stuffing will be secure since you only have to slit the kerelas and not cut them into half. If you still wish to tied a thread use any thick cotton thread.

i just included in the recipe.....u could add fresh tomato puree after onions but as I added canned tomato puree, I added towards the end.

Karela is quite good for health especially for blood sugar! Also known as bitter melon or in Sanskrit, karela, this spiny plant which has a bitter taste helps regulate blood sugar levels, thus is used liberally amongst diabetic people. Its antidiabetic property is due to the presence of gurmarin, a polypeptide which has a chemical structure similar to that of bovine insulin. The presence of lectins help metabolize lipids, whereas alkaloids such as momordicine can treat blood diseases, scabies, itching, psoriasis, ringworm, fungal diseases, eye complications, hypertension, neuritis, defective metabolism of carbohydrates. It also demonstrates hypocholesteroemic activity and is rich in vitamins A, B1, B2, C and minerals such as iron.
