Karela Kadhi Recipe

Karela kadhi is an indian bittergourd preparation that is cooked with curd and water. Spiced with ginger and green chilies and thickened with corn flour, the karela kadhi goes best with rice and has great health benefits.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Ingredients

 Finely chopped bitter gourd1⁄4 Cup (4 tbs)
 Chopped onion1⁄2 Cup (8 tbs)
 Ginger green chili paste1 Teaspoon
 Low fat curd1 Cup (16 tbs)
 Besan2 Tablespoon (Bengal Gram Flour)
 Chopped coriander1⁄4 Cup (4 tbs)
 Oil1 Teaspoon
 Salt To Taste

Directions

Heat oil in a non stick pan, add onions and saute for a few minutes.
Add karelas and salt, and cook over a medium flame till they are soft.
In a bowl, whisk curd and Bengal gram flour together till they form a smooth paste.
Add ginger green chilli paste and the gram flour and curd mixture to the sauteed onion and karelas along with 1 cup of water.
Bring to a boil while stirring continuously.
Add more salt if needed and simmer for a few minutes.
Serve hot garnished with chopped coriander.
