Kapeli Keri No Murrabo Recipe
Ingredients
| 10 kg half raw, half ripe mangoes | ||
| Sugar | 7 1/2 Kilogram | |
| 6 ltr water for syrup | ||
| Limes | 2 | |
| 125 g chemical lime | ||
| 1 ltr water for lime solution | ||
| 3-4 one-inch pieces cinnamon | ||
| Cardamoms | 2 Tablespoon, pounded | |
| Salt | 2 Teaspoon | |
Directions
Peel and cut mango into one-and-a-half-inch chunks.
Pierce with a fork.
Mix chemical lime with water and allow lime to settle.
Gently strain water and mix with mango pieces.
Leave for 8-10 hours.
Wash mangoes in fresh water Make sugar syrup and bring to boil.
Squeeze in lime juice along with cut limes.
Remove scum and strain.
Add mangoes and cinnamon.
Simmer till mangoes are cooked and syrup is thickened.
Add salt and cardamom.
Cool completely and bottle.
