8-oz pkg (240 g) Fettuccine Noodles cooked al dente, drained
1 tbs (15 ml) olive or canola oil
1/2 cup (120 ml) asparagus tips and pieces, cut diagonally in 1/2-inch lengths, or zucchini, thinly sliced
1/2 cup (120 ml) green or red pepper, cut into 1/2-inch chunks
1/4 cup (60 ml) green onion, sliced
1 garlic clove, minced
6-oz can (180 g) salmon, drained
1 cup (240 ml) frozen peas, thawed
2 tbs (30 ml) fresh parsley or 2 tsp (10 ml) dried parsley
1/2 tsp (3 ml) dried basil
1/2 cup (120 ml) plain low-fat yogurt
2-3 tbs (30-45 ml) Parmesan cheese, grated
Directions
Cook fettucini noodles.
Meanwhile, heat oil in a large skillet.
Add asparagus or zucchini, pepper, onion and garlic and saute until crisp-tender.
Add salmon in chunks, peas, parsley, and basil.
Saute until mixture is heated through and peas are soft.
Drain pasta and add yogurt.
Toss salmon mixture with pasta.
Top with Parmesan cheese.
