Kamloops Pancakes Recipe
Ingredients
| Flour | 2 Cup (16 tbs), sifted | |
| Salt | 1/2 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Baking powder | 2 Teaspoon | |
| Sugar | 3 Tablespoon | |
| Eggs | 3 Large | |
| Buttermilk | 1 3/4 Cup (16 tbs) | |
| Lemon juice | 4 Tablespoon | |
| 1/4 c. butter, melted 50 mL | ||
| 3/4 c. coarsely grated apples 175 mL | ||
| Golden Raisins | 1/2 Cup (16 tbs) | |
Directions
Sift together the flour, salt, baking soda, baking powder and sugar.
Beat the eggs until thick; stir in the buttermilk, lemon juice, and melted butter.
Gently fold in the grated apple and golden raisins.
Stir only until the ingredients are just mixed.
Do not overmix.
Let the batter rest at room temperature for 15 minutes.
Preheat a griddle or frypan and oil it lightly.
Prepare the pancakes in your usual manner, cooking on both sides until golden brown.
Serve warm with melted butter and a syrup of your choice.
